Adjust by species and aroma

Black Summer Truffle - Tuber aestivum is delicate and nutty, so it often needs a more generous shave. Burgundy Truffle - Tuber uncinatum and Spring White Truffle - Tuber borchii can be more assertive when in season, but both are currently out of stock.

Fresh truffle lots vary by species, aroma, season, and available grams. Customers on the Thursday Harvest List receive the current price per gram before ordering, so menu math should be built from the current Thursday list.
