What is Tuber aestivum?

Tuber aestivum is Black Summer Truffle, often called Scorzone. It is milder than Burgundy or white truffles, so it should be used generously and finished over warm dishes rather than cooked hard.

How much truffle per dish?

Use 3-5 g per dish for planning. A 50 g chef trial generally supports about 10 dishes at 5 g per portion, depending on the plate size and service style.

How to shave fresh truffles

Use a clean truffle shaver or mandoline directly over the finished warm dish. Shave at the pass or tableside so aroma reaches the guest before it fades.
