Direct answer

Fresh truffles are priced weekly by lot because every harvest is different. Species, aroma, maturity, available grams, condition, and season all affect the current price per gram.

Fresh truffles are not shelf-stable inventory

Italian Truffle Pantry products can be handled with stable retail or trade pricing because they are preserved products. Fresh truffles are perishable, aromatic ingredients that change week to week and should be evaluated as a current lot.

What changes the price per gram?

  • Species: Black Summer Truffle - Tuber aestivum is priced differently from Burgundy Truffle - Tuber uncinatum or Spring White Truffle - Tuber borchii.
  • Aroma and condition: stronger lots and cleaner handoff quality affect value.
  • Season and availability: limited grams can change pricing quickly.
  • Service timing: restaurants need current quality information before building menus.

How Tuber House communicates price

Customers on the Thursday Harvest List receive current details every Thursday: species, commercial name, photos, available grams, delivery timing, and current price per gram. Fresh orders close Sunday EOD for delivery the following Wednesday-Friday.
