Fresh lots are not shelf goods
A fresh lot reflects a specific harvest. Naming the species and lot keeps menu decisions clear. Black Autumn Truffle - Tuber uncinatum and White Truffle - Tuber magnatum Pico are currently in stock as Grade I fresh lots; Black Summer Truffle - Tuber aestivum - Scorzone and Spring White Truffle - Tuber borchii are currently out of stock.
What the Harvest List includes
Each current allocation includes the species, Grade I status, available grams, lot details, delivery window, and current price per gram. Chefs can decide what fits the coming service week before reserving.
Delivery is planned with the lot
Reservations close Sunday at the end of the day for Wednesday-Friday delivery the following week. Delivery is $20 CAD under $170 CAD and complimentary at $170 CAD or more in a confirmed scheduled zone.
